The cuisine in Florence bases a majority of its dishes on meat, mainly tripe and lampredotto which are sold in food carts all through the city. Other dishes include crostini toscani, prosciutto, salame, ribollita, papa al pomodoro, panzanella and bistecca alla fiorentina.
